For a scrumptious sweet treat that melts in the mouth, we can’t go past the classic melting moments. Two delicate shortbread pieces sandwiched together with a soft buttery filling is our idea of treat heaven! Mum of three, Kasey, baked a batch for her little girl’s Fairy Garden Party, and happily shared her recipe for these delicious bite sized beauties.
For the biscuits:
- 1 1/2 cups plain flour
- 1/3 cup gelatin
- 150g softened butter
- 1 teaspoon vanilla essence
For the frosting:
- 250g sifted icing sugar
- 80g softened butter
- 25ml milk
- 1/2 teaspoon vanilla essence
- Drops of food colouring
Instructions:
- Preheat oven to 160 degrees..
- Use an electric whisk to beat butter, sugar and vanilla together.
- Add flour and beat until combined.
- Roll teaspoonfuls of mixture into balls and place on tray 5cm apart.
- Using a fork gently flatten each ball.
- Bake for 12 to 15 minutes or until lightly brown.
- Set aside until cool.
Icing:
- Use an electric whisk to beat the icing sugar and butter together until well mixed.
- Combine the milk and vanilla essence in a separate bowl, then add to the butter mixture small amounts at a time.
- Once combined mix well on a high speed.
- Add desired amount of food colouring.
- Beat until the mixture is light and fluffy, then sandwich between two pieces of biscuit
Tips:
- Try to roll the balls as evenly as possible to prevent some cooking quicker than others.
- Ensure you regularly dip the fork in flour when pressing the balls of dough to stop the fork from sticking.
