Melting Moments Recipe

For a scrumptious sweet treat that melts in the mouth, we can’t go past the classic melting moments. Two delicate shortbread pieces sandwiched together with a soft buttery filling is our idea of treat heaven! Mum of three, Kasey, baked a batch for her little girl’s Fairy Garden Party, and happily shared her recipe for these delicious bite sized beauties.

For the biscuits:

  • 1 1/2 cups plain flour
  • 1/3 cup gelatin
  • 150g softened butter
  • 1 teaspoon vanilla essence

For the frosting:

  • 250g sifted icing sugar
  • 80g softened butter
  • 25ml milk
  • 1/2 teaspoon vanilla essence
  • Drops of food colouring

Instructions:

  • Preheat oven to 160 degrees..
  • Use an electric whisk to beat butter, sugar and vanilla together.
  • Add flour and beat until combined.
  • Roll teaspoonfuls of mixture into balls and place on tray 5cm apart.
  • Using a fork gently flatten each ball.
  • Bake for 12 to 15 minutes or until lightly brown.
  • Set aside until cool.

Icing:

  • Use an electric whisk to beat the icing sugar and butter together until well mixed.
  • Combine the milk and vanilla essence in a separate bowl, then add to the butter mixture small amounts at a time.
  • Once combined mix well on a high speed.
  • Add desired amount of food colouring.
  • Beat until the mixture is light and fluffy, then sandwich between two pieces of biscuit

Tips:

  • Try to roll the balls as evenly as possible to prevent some cooking quicker than others.
  • Ensure you regularly dip the fork in flour when pressing the balls of dough to stop the fork from sticking.
