Magical Toadstool Cupcakes

If you’re looking for a cheap cheat for kiddie’s party food, we have just the trick!
Mum of three, Kasey, shares her quick and easy recipe for Magical Toadstool Cupcakes that will keep those famished party-goers feeling fab!

Makes approximately 30 mini cupcakes

What you need:
For the cupcakes
White Wings Chocolate Cupcake Packet Mix

For the icing
250g sifted icing sugar
80g softened butter
25ml milk
½ teaspoon vanilla essence
Drops of food colouring
Cadbury real white chocolate baking chips

Mixing bowl
Wooden spoon
Palette knife
Electric whisk
Snaplock bags
Mini cupcake baking tray

How to:
Follow instructions on packet mix to make cupcake batter. Place in the oven and set aside until cool.
Use an electric whisk to beat the icing sugar and butter together until well combined.
In a separate bowl mix milk and vanilla essence. Add butter mixture in small amounts.
Once combined, mix well on a high speed.
Add desired amount of food colouring to icing and beat until the mixture is light and fluffy.
Decorate the cupcakes with icing and create ‘mushroom’ look with white chocolate buttons.

Ensure that the size of your cupcakes are consistent by using a piping bag for your batter. This makes it easier to control the amount of mixture that goes into each cupcake.
To create a ‘mushroom’ look, add a little more mixture than usual so the batter bakes over the cupcake mould.
